Spiced Pancakes & Brandy Berry Sauce For Two

yields: 4 pancakes

1 c. Jiffy (or Bisquick) Pancake Mix
1/4 c. honey wheat germ
1/2 c. soy milk (you may need to add a little more, the batter should be thick but easy to pour)
1 tsp. pure vanilla extract
1 tbs. cinnamon
1 egg (or vegan substitute is optional, but adding it will make them thicker and more cake-like)

1. Heat griddle on medium heat and grease
2. Combine all ingredients until well blended
3. Pour by scant 1/4 cups into griddle
4. Cook until edges are dry – FLIP- cook until golden brown on both sides

Berry Brandy Sauce
1 c. berries of your choice (I think blueberries taste especially great with brandy)
3/4 c. water
1/3 c. organic unbleached sugar
1 tbs. fresh lemon juice
1 tbs. brandy
2 tsp. cornstarch
1 tbs. butter (or Earthbalance for our vegan friends)

1. Puree berries and 1/2 c. water in blender
2. Combine puree, remaing 1/4 c. water, sugar, lemon juice, brandy, and cornstarch in saucepan and bring to boil, stirring constantly
3. Boil 1 minute, remove from heat and stir in butter.
4. Serve warm over pancakes
